Ode to Healthy Eating

Hello friends!
So I know this is January and it's the month that everyone makes goals and usually loses sight of them by February. We just won't talk about that for now. I'm confident I can eat healthier because I WANT to. I've wanted to for a while, but it's hard sometimes not having contorl over what food we buy at the house seeing as I still live at home. My family doesn't eat "not healthily" by any means, but this year I want to try exploring new foods and ideas so that when I move out I know some fun, fresh, and healthy recipes I can make my family. Sound familliar? Ha, my sister-in-law, Becca, sort of started this whole healthy eating craze in me. Last year, she eliminated meat from her diet (except fish), not because she wanted to be a trendy tree-hugger, but because she thought it would open her eyes to the different healthy choices out there. This year, I plan to follow her footsteps. Again, not because I want to be trendy or because I'm the newest member of PITA, but because there's so much more to food than just chicken and rice. I'm really excited to try new foods and to COOK! I made a deal with my mom that if I did this, I would made dinner two nights a week! I guess I get the better end of the deal because I love cooking so it will be a blast to learn new recipes and cook them for the fam! :)

I plan to carry this on the whole year, though many say I won't last a week-- we'll see what happens!

hehe, silly nat, you are obviously not a tree hugger. :) So are you going veg? anywhos, NATALIE!!! I'm workin on the same thing! which is a whole hecka lot harder here, where I have only a microwave in my suite. haha, I need to go buy some pots and pans, so I can make me some real food in the common area! You should give me cooking lessons, cause i have zilch. Share recipes!
